Ingredients

  • 185g (6½oz) chicken breast, chopped
  • 1 tsp coconut oil
  • 30ml (1¼fl oz) coconut milk
  • 30g (1¼oz) Thai green paste
  • ½ an onion, peeled, chopped
  • 50g (1¾oz) green beans

Method

  1. Heat the coconut oil in a pan. Add the onion and green beans and cook over a medium heat until tender.
  2. Add half the Thai green paste and cook for 1 minute. Add in your chicken breast and cook through.
  3. Add the coconut milk and remaining Thai green paste. Bring to the boil, then turn down to a simmer for 5-10 minutes. Serve hot.
