Chocolate chips cookies

Ingredients

  • 80 g butter
  • 100 g coconut sugar
  • 1 large free-range egg
  • 150 g brown rice flour
  • 150 g cornflour
  • a pinch of sea salt
  • 80 g whole toasted almonds, chopped
  • 100 g gluten-free dark chocolate chips

Instructions

  1. Preheat the oven to 180°C/Gas Mark 4.

  2. In a bowl, add the butter, sugar and egg and mix.

    Add the flours, a pinch of salt and the almonds and, stirring to combine.

  3. Add the chocolate drops and knead the dough until firm, then carefully pour the mixture onto a baking sheet lined with parchment paper.

    Bake in the oven for 10-15 minutes.
