Preheat the oven to 180°C/Gas Mark 4. Lightly grease a 35cm (12in) round baking tray.
Place the fruit in a saucepan. Add the date syrup and lemon juice and cook for 5 minutes. Remove from the heat, add the ginger and stir.
Roll out the pastry and spread with the jam. Add the fruit.
Bake for 15 minutes, then serve immediately.
