Healthy Coconut Banana Bread

A beautiful banana bread made with coconut flour

Ingredients

  • 3 ripe bananas peeled
  • 5 medium free-range eggs
  • 4 pitted dates mashed
  • 2 tsp vanilla extract
  • 60 ml The Groovy Food Company Coconut Oil
  • ½ tsp ground cinnamon
  • 2 tsp gluten-free baking Powder
  • 70 g The Groovy Food Company Organic Coconut Flour
  • 2 tbsp chia seeds

Instructions

  1. Preheat oven to 160c/Gas Mark 2 and line a loaf tin with baking paper.

  2. Mix all ingredients together in a food processor or mixer, then place in the tin

  3. Bake in the oven for 50-55 minutes or until a skewer comes out clean and the top is golden brown.
