Sweet & Sour Pork

A family favourite and a quick and easy midweek meal, this Sweet & Sour Pork from Opies is so tasty!

Ingredients

  • 3 balls Opies Stem Ginger in Syrup, chopped
  • 500 g pork fillet cubed
  • 350 g tinned Pineapple Pieces
  • 1 onion chopped
  • 1/2 red pepper de-seeded and cubed
  • 1/2 green pepper de-seeded and cubed
  • 1 glass sherry
  • 4 tbsp gluten-free soy sauce or tamari
  • 30 ml Red Wine Vinegar
  • 30 ml ginger syrup from the jar
  • 1 tbsp brown Sugar
  • 1 tbsp tomato pureé
  • 1 tbsp sunflower oil
  • 1 tbsp cornflour
  • gluten-free noodles or rice to serve

Instructions

  1. Heat the oil in a pan and cook the onion, pork and peppers for 3-4 minutes.

  2. Combine the pineapple pieces and juice, chopped ginger, ginger syrup, sherry, vinegar, tomato purée and soy sauce/tamari. Add to pan and cook gently for 8-10 minutes until pork is cooked.

  3. Blend the cornflour with a little water to form a smooth paste, then add to pan, stirring continuously until the sauce thickens.

  4. Serve with rice or noodles

  5. TIP: Swap the pork with chicken, or for a vegan option use tofu.
