Chocolate Chip Doughnuts

We love a good doughnut, especially when they’re packed full of dark chocolate chips, and smothered in rich chocolate sauce. And these are much healthier than their fried counterparts, and contain no refined sugar, so you can treat yourself to more than one if you fancy!

Chocolate Chip Doughnuts

Ingredients:
  • 1/2 cup almond flour
  • 1/2 cup ground flax seeds
  • 1/2 cup dates
  • 1/2 cup coconut milk, nut milk, or full cream milk
  • 1 egg
  • 1 Tbsp almond butter
  • 1 tsp bicarbonate soda/baking soda
  • 1/2 tsp salt
  • 1 tsp raw apple cider vinegar
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 – 1/2 cup dark choc chips
Instructions:
  1. Preheat the oven to 170ºC
  2. In a food processor, pulse the dry ingredients and dates.
  3. Add the wet ingredients except the choc chips and blitz for a few seconds.
  4. Stir in the choc chips.
  5. Spoon into either a donut pan, cupcake cases or a loaf tin
  6. Bake for 20-30min depending on tin (they will be ready when they turn dark brown)
  7. Remove and leave to cool
