Gluten-free chocolate vanilla muffins

With only 5 grams of coconut sugar and absolutely no dairy, these gluten and dairy-free chocolate and vanilla muffins are the perfect healthy snack!

For the vanilla batter:

  • 85g (3oz) cornstarch
  • 40g (1½oz) gluten-free flour mix
  • 2 tsp coconut oil
  • 2 free-range eggs
  • 1 tsp coconut sugar
  • 20ml (¾fl oz) coconut milk
  • 1 tsp apple cider vinegar
  • 1½ tsp vanilla extra
  • 1 tbsp gluten-free baking powder

For the chocolate batter:

  • 35g (1½oz) gluten-free 100% dark chocolate, melted
  • 25ml (1fl oz) coconut milk
  • 10g (½oz) gluten-free 100% dark chocolate chips
  • 10g (½oz) cornstarch
  1. Preheat the oven to 180°C/Gas Mark 4. Grease the holes of a 12-hole mini muffin tin.
  2. For the vanilla batter, mix all the dry ingredients in a bowl (or in a food processor), then add the wet ingredients and combine. Divide the batter between two bowls.
  3. Add the ingredients for the chocolate batter in one of the bowls and mix well.
  4. Drop one scoop of vanilla batter and one scoop of chocolate batter into each muffin hole, decorate with extra chocolate chips, then bake in the oven for 25 minutes.
