An ode to summer… we’ll miss you. This delicious gluten-free fruit tart from Veronica Lavenia is the perfect transitional pudding. With fruit and jam in a puff pastry, it’s gluten-free, vegan and sugar-free.

  • 10 apricots, halved
  • 15 strawberries, halved
  • 1 tbsp date syrup
  • 1 juice of 1 lemon
  • 1 tsp ground ginger
  • 2 tbsp sugar-free apricot or strawberry jam
  • 250 g gluten-free puff pastry
  • a handful of mint leaves


  1. Preheat the oven to 180°C/Gas Mark 4. Lightly grease a 35cm (12in) round baking tray.

  2. Place the fruit in a saucepan. Add the date syrup and lemon juice and cook for 5 minutes. Remove from the heat, add the ginger and stir.

  3. Roll out the pastry and spread with the jam. Add the fruit.

  4. Bake for 15 minutes, then serve immediately.
