Open Mackerel and Avocado Sandwich

Ingredients

  • 2 slices Promise Gluten Free Multigrain Bread
  • 3 tbsp mayonaisse
  • a small handful watercress
  • 1 avocado cut into wedges
  • 1 tsp Dijon mustard
  • 1/2 lemon
  • 2 tbsp Greek yoghurt

Instructions

  1. Make the dressing by whisking together the mustard, yoghurt and lemon juice.

  2. Make the sandwich by first spreading each slice with some mayo.

  3. Layer on some sliced avocado, watercress and chunks of mackerel

  4. Finally, drizzle over the dressing and enjoy!
