Making the most of the leftovers from Christmas Day has just been made very simple – This delicious Turkey and avocado sandwich from Paul Kelly of Kellybronze is a sure-fire festive winner!
Open turkey and avocado sandwich
Leftover Turkey has no better home!
- 50 g leftover turkey
- 1 slice seeded gluten-free bread
- 1/2 avocado
- 1/2 mozzarella ball
- 2 sprigs fresh basil chopped
- 1/2 fresh red chilli chopped
- olive oil
Crush the avocado with a fork and spread over one slice of seeded seed bread.
Tear the mozzarella and place on top, along with some finely sliced basil leaves, the turkey and finely sliced red chilli.
Drizzle with olive oil and some salt and pepper to serve.
