Pineapple Sorbet

This delicious pineapple sorbet by Del Monte is so easy to make and so quick to demolish!

With just three ingredients, this sorbet is a perfect dessert to have after a hearty winter meal (or in fact anytime of the year). Prep time is just five minutes!

Ingredients

  • 2 tins Del Monte® Gold Pineapple Chunks with Juice
  • 2 limes grated zest and juice
  • 50 g coconut flakes toasted

Instructions

  1. Lay the pineapple chunks and the juice on a high sided lined tray that will fit in your freezer.

  2. Place in the freezer for a minimum of 5 hours or ideally overnight.

  3. Remove the pineapple from the freezer and let it thaw for about 5 minutes. Break up the frozen pieces if you can and then add to a blender with the zest and juice of both limes. 

  4. Blitz until smooth and creamy, stopping and stirring occasionally then spoon into a container.

  5. Place back in the freezer for 1-2 hours then remove from the freezer 15 minutes before serving. 

  6. Serve with extra lime zest and coconut flakes.
