Salted Chocolate and Banana Bread Blondies

I love everything about the combination of sea salt and chocolate. I love sweet and salty treats. These blondies are the perfect healthy snack or healthy dessert. They have no oil, no eggs, and no butter, but you’d never know! Packed with banana flavor, and vegan chips, these blondies are the perfect weeknight dessert.

Ingredients

  • 2 tbsp plant-based milk 
  • 2 mashed bananas 
  • 125 g peanut butter or nut butter 
  • 3 tbsp maple syrup, honey or agave
  • 60 g gluten-free flour 
  • 50 g sugar or coconut sugar 
  • ½ tsp gluten-free baking powder
  • ¼ tsp bicarbonate of soda

For the topping

  • a sprinkle of sea salt 
  • vegan or sugar-free chocolate chips

Instructions

  1. Preheat the oven to 180°C/Gas Mark 4.

  2. Mix wet ingredients together in one bowl. Fully combine so there are no lumps. Mix dry ingredients together in another bowl. Slowly add the wet ingredients to the dry bowl. Combine. 

  3. Pour into a nonstick 23x23cm (9x9in) baking dish. You can spray the baking dish with light oil spray or line with parchment paper. Bake for 20 to 25 minutes. Remove from the oven. Immediately top with chocolate chips and salt. Let the chocolate chips melt on top. Let cool for 15 minutes before serving.
