Vegan cheese toasties with caramelised onion

Fancy a step-up from your usual cheesy toastie? This vegan cheese toasties recipe may need quite a few ingredients but you throw most of them into a blender to make a delicious vegan cheese!

Vegan cheesy toasts with caramelised balsamic onions
Ingredients
- gluten-free bread of choice, toasted
For the onions
- 3 red onions, peeled, sliced into long strips
- 3 tbsp olive oil
- 2 tbsp balsamic glaze
- 1 tsp vegan and gluten-free Worcester sauce
- a pinch of sea salt
For the cheese
- 200 g cashews, soaked for 2-3 hours until soft
- 1 tbsp vegan butter
- 1 tbsp gram flour (chickpea)
- 100 ml plant-based milk
- 4 tbsp nutritional yeast
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp garlic powder
- a squeeze of lemon juice
- a large pinch of sea salt and a twist of freshly ground black pepper
Instructions
To make the caramelised onions

Add the oil and sliced onion to a small pan and fry very slowly on a low heat for 30-40 minutes until caramelised.

Add the salt and pepper, balsamic glaze and Worcester sauce. Set aside.
To make the cheese topping

Add all the ingredients to a food processor or high-speed blender, then blitz until very smooth and creamy.
To make the toasts

Slice the toast into small slices.

Top with the cheese mix, then pop under the grill until the top starts browning. Serve topped with the caramelised onions.
