Gluten-free apple chip muffins
Gluten-free apple chip muffins recipe by Veronica Lavenia
A simple recipe for some cute small cakes, bake these gluten-free apple chip muffins for a healthy treat.

Apple chips small cakes
Ingredients
- 2 large free-range eggs
- 80 g date syrup
- 80 ml mild extra-virgin olive oil
- 1 tbsp plain yoghurt
- 250 g brown rice flour
- 15 g gluten-free baking powder
- 1 tsp ground cinnamon
- 1 tsp vanilla 'Bourbon' powder
- 75 g organic apple chips
Instructions

Preheat the oven to 180°C/Gas Mark 4.

Beat the eggs with the date syrup. Add the oil, yoghurt, sifted flour, vanilla powder, baking powder and cinnamon.

Oil and flour 10 muffin moulds and pour in the mixture. Sprinkle the surface with the apple chips, then bake for 40 minutes.
